Hyderabadi Veg Biryani


Biryani is very famous Dish of indian origin ,mostly Enriched  by Special type of rice called Basmati Rice (Long Aged Rice) .Its prepared in two different Varieties RAW Meat (Kacchi Gosht)  Or Cooked Meat (Pakki Gosht).Its being a staple Recipe from the period of Nizam's (Emperor)  Rule cooked after blending of Muglai and Iranian Cuisine from the City of hyderabad.
Hyderabadi Biryani has its traditional roots originated in Nizams Kitchen to serve their Relatives and Visitors .

The ingredients are Meat (Chicken or Goat) marinated in a yougurt with onion spices coriander leaves lemon and fried onions used to garnish .Safron color adds extra color and taste to biryani.
Vegetable biryani is made for the vegetarian people instead of meat Raw vegetables are firstly fried then make it a gravy with yogurt and other spices .
 Basmati rice is more than half cooked is layered with that gravy mixture with butter or ghee  and fried onions for garnishing .



In  this recipe Veg Biryani shown I have used carrots,onions,beans,tomato and potatoes .All these Vegetables are cut into medium slices and then they are fried in oil then kept aside for further preparation.
In wok (kadai) add oil then add Ginger garlic paste let it get cook till light brown  and add all fried vegetables with tomatoes and Yougurt .To this mixture add red chilli powder,salt,garam masala and let it cook for 5 minutes on medium low flame so that all vegetable gets tender and a thick gravy sauce is obtained .Use this Gravy to layer with rice as shown in video.
